I outfitted this with a seven segment display (TM1637) connected to an ESP32 running ESPHome, which displays an input number is stored in Home Assistant and updates the moment it's changed. An automation in Home Assistant also increments the number automatically at midnight.
Yes, this could totally be a standalone thing with real-time clock and no networking, but this over-engineered solution comes with the benefit of being able to reset the counter automatically using integrations.

The input number (called days_since_last_incident here) can be set up in Home Assistant at Settings > Devices & Integrations > Helpers.
Printing advice
The embossed text is 0.2 mm tall, so using a multi-color printer to print it in a different color at 0.2mm layer height is possible with minimal waste.
