Here's a few reasons why you may NOT want to 3D print your own shims, can you think of any more?

Dimensional accuracy of shop-bought shims is better (do I care?)
Shop-bought shims are about 2% cheaper. Last year they were about 30% cheaper (cost for shop-bought shims has increased hugely over last 18 months), maybe the cost of retail versions may come down again?
Might not have enough filament colours to ensure different thicknesses are printed in different colours? (Quite a handy feature when grabbing them out of a box)
You don't have to wait for the 3D print to finish (although you do have to sit in traffic if you need it today…)

Apart from that, I think this is a good idea. And you can have them any width, length, or thickness you desire.

Printing instructions

I print with 0.6 nozzle and 0.4 layer height, but anything will work
Optionally remove skirt - I prefer to do this to save time and my prints don't lift. The design is not subject to warp
Print in PETG because it's more flexible
Set perimeters to 1 - reduces print time without changing strength
