This is an updated version of the great case (v2) by Ioannis:
I tried to keep all design choices as they were intended (snap fit mechanism, enclosed design, ventilation, usb-c power) and only updated it to work with 7" touch displays (mine has a resolution of 1024x600). I think most generic displays should work, you need to watch out for these aspects specifically:
HDMI/USB ports on the right side
mounting points distance
As these displays usually don't have mounts for the RPI, i added them to to rear panel.
Due to these changes i wasn't able to maintain the screwless design, here is the BOM (in addition to the one from the original model):
2x M3x4 for USB-C breakout board
2x M3x12 for foot, ideally FHCS or you might need longer ones
4x M2.5x6 for RPI
4x M2.5x8 for display
angled HDMI adapter (eg https://www.amazon.de/dp/B0GZ3CX21C)
short HDMI cable <30cm
short, angled micro-usb cable (eg https://www.amazon.de/dp/B0FNRZMT3F)
Notes on the BOM:
cable adapter aren't required, but i designed the case with these in mind. if you don't want to use them you need to remix the case so that there is more space on the right side of the display
i didn't use any heatset inserts for this model. screws thread directly into plastic, so be careful to not overtighten them! you can use either self-tapping screws or machine screws (as i did)
Assembly:
Solder the micro-usb port and usb-c breakout board. we only need GND (black wire) and 5V (red wire). test if the RPI powers on with it before moving on

Mount the usb-c breakout board and RPI, connect them

attach the foot (old short version in the picture), flat side towards ventilation

Connect adapters/cables to display

Insert display, bottom side first. mount it to the case. you probably need a ball hex for the lower screws

connect cables from display to RPI

close the case by snapping the two parts together
